This Huehuetenango coffee supports a group of women coffee farmers, and we are so happy to be a part of it!
Due to the high altitude, nearly all of Huehuetenango's producers process their own coffee. Fortunately, the region has rivers and streams in abundance, so mills can be placed almost anywhere.
This coffee does well in all brew methods. For pour over, try a 1:16 to 1:17 ratio and a kettle temperature of 208°.
For espresso, a good starting point is: 16 grams in and 38 grams out in 25-35 seconds with a boiler temp of 203°. Happy Brewing!
