We bring you the finest Papua New Guinea Simbai Balus Kopi AX, a specialty green coffee sourced from the remote Simbai region, just over the Bismarck Range bordering the Western Highlands and Sepik Provinces. Grown in fertile volcanic soil at 1,600–1,900 meters, this coffee is cultivated by over 4,000 smallholder farmers and airlifted from isolated airstrips—earning its name "Airplane Coffee." With a cup score of 85, it offers a rich, full-bodied experience.
We mainly enjoy this coffee as pour over/drip but it does well in all brew methods. For pour over, try a 1:16.5 ratio and a kettle temperature of 202°.
For espresso, a good starting point is: 17 grams in and 42 grams out in 25-33 seconds with a boiler temp of 201°. Happy Brewing!
