Sourced from smallholder farmers in the Dimtu Tora kebele of Hambela Wamena woreda, this standout lot was processed at the Dimtu Tora station (established in 2022) under Azeb Tadesse’s oversight. Grown at 1,900–2,300 meters above sea level in rich volcanic soil, the heirloom varieties — Dega, Kurame, and 74110 — flourish beneath a diverse shade canopy of Enset, Albizia, Acacia, Militia, and Polyscias trees. This certified organic agroforestry system promotes biodiversity while nurturing exceptional bean quality.
The natural process lets the coffee’s character shine: ripe cherries are hand-sorted and sun-dried on raised beds for about two weeks, reaching ideal moisture levels. A transparent voucher system tracks every cherry from farm to final storage, guaranteeing traceability and consistent quality.
In the cup, this coffee delivers a medium body and medium acidity balanced by an irresistible burst of flavors: lush blueberry and tropical fruit take center stage, interwoven with bright hibiscus, smooth honey, comforting vanilla, and a lively hint of yuzu. The result is juicy sweetness, delicate floral notes, and a clean, memorable finish — a true tribute to Ethiopia, the birthplace of coffee.

We mainly enjoy this coffee as pour over but it does well in all brew methods. For pour over, try a 1:16.5 ratio and a kettle temperature of 205°.
For espresso, a good starting point is: 17 grams in and 42 grams out in 25-33 seconds with a boiler temp of 203°. Happy Brewing!
