What sets this coffee apart is its innovative supernatural processing: cherries are hand-sorted, floated to remove defects, and then sealed in carbon fiber drums for an anaerobic fermentation of 7–10 days at 15–18°C. This controlled environment allows fruit sugars to develop intensely without over-fermentation risks, resulting in a full natural process finished with slow sun-drying on raised beds and extended resting for optimal flavor stability.
Expect a vibrant cup bursting with strawberry jam, apricot, hibiscus, baking spice, and heavy cream—notes that evoke the explosive, perfume-like profiles unique to Gedeb’s terroir, bridging the best of Yirgacheffe and Guji influences. Processed by EDN Ethiopian Coffee at their Chelchele station, which supports over 200 workers and prefinances local farmers to promote sustainability, this is specialty coffee with depth and community impact.
We mainly enjoy this coffee as pour over but it does well in all brew methods. For pour over, try a 1:16.5 ratio and a kettle temperature of 205°.
For espresso, a good starting point is: 17 grams in and 42 grams out in 25-33 seconds with a boiler temp of 203°. Happy Brewing!
