Nestled within the Chontali mountain range of Cajamarca, the Chonta region surrounds the fertile Chunchucas river valley. At elevations ranging from 1100 to 2100 meters above sea level, the steep, forested terrain softens into arable land, making it ideal for coffee cultivation. Since coffee farming first took root here in the 1950s, Chonta has steadily grown into a vibrant coffee-producing region, now spanning approximately 2,700 hectares. Most farms are smallholder operations, each managing just 2–4 hectares of rich, loamy soil.
This relationship coffee comes from a select group of dedicated farmers. Fully washed to highlight the unique characteristics of the region, the cup profile offers lively acidity and a rich body, with notes of milk chocolate, nougat, almond, and red apple.
This coffee truly shines in any brew method. For pour over, try a 1:16 ratio and a kettle temperature of 203°. For espresso, try a 1:2.5-3 ratio with a boiler temp of 202°. Happy Brewing!
