After careful washing, the beans undergo an extended slow-drying process on raised beds under shade nets — a technique Rex pioneered at export scale in PNG. By carefully controlling drying times and monitoring temperatures, this method stabilizes moisture, protects flavor, and unlocks exceptional cup quality.
