Origin: Nariño, Colombia (Los Guayacanes Farm)

Producer: Evelio Audias Lasso Bolaños

Altitude: >2,400 MASL

Variety: Chiroso (Ethiopian landrace)

Process: Low-intervention Fully Washed (extended dry fermentation + slow parabolic drying)

Discover one of Colombia’s most exciting emerging cultivars with this rare Chiroso microlot from the high Andes of Nariño. Produced by Evelio Audias Lasso Bolaños on his 3.5-hectare farm, Los Guayacanes, in the San Pedro de Cartago municipality, this coffee showcases the bright, complex potential of an Ethiopian landrace now thriving in Colombia’s rugged southern mountains.

Grown at elevations surpassing 2,400 meters, this Chiroso undergoes a meticulous low-intervention washed process: hand-picked cherries are depulped daily, fermented dry for 50–60 hours in the cool alpine climate, washed with fresh water, and then dried slowly over 33 days (first in thin layers, then in a parabolic dryer with regular rotation). The result is exceptional density, clarity, and flavor intensity.

Tasting Notes:

Bright and structured with vibrant notes of blood orange, guava, and sweet lemon curd, layered with delicate floral aromatics. The finish brings rich layers of toasted coconut, plum, dark chocolate, toffee, and hints of tamarind, marzipan, and lemon verbena. Some cups reveal buttery, syrupy sweetness reminiscent of a maple bacon donut — complex, clean, and deeply satisfying. Expect sparkling acidity and a balanced, lingering finish.

The Story Behind the Cup:

Evelio Lasso brings 18 years of cupping experience to his craft. Working with Terra Coffee SAS (Ecoterra association), he focuses on quality-driven microlots that support small family farms and improve livelihoods across the community. Chiroso — sometimes affectionately called “Colombian Gesha” — was genetically traced to an Ethiopian landrace, offering a unique profile distinct from traditional Bourbon or Caturra lines. This lot highlights how Nariño’s extreme altitude and slow, natural processing create dense, expressive coffees full of fruit-forward complexity.

This Crown Jewel microlot is a standout for pour-over, AeroPress, or flatbed brewers (recommend a slightly coarser grind due to high solubility). Fresh-roasted in small batches by 6 Planes Coffee to highlight its bright fruit and floral elegance.
