Experience the rich heritage and bold flavors of Mexico Chiapas, a washed-process coffee that reflects the dedication and resilience of its grower, Mario Santiz Lopez. As a second-generation coffee farmer and owner of Finca Vista Hermosa, Mario cultivates his beans on a small 2.5-hectare farm in the Altos region of Chiapas.

Before coffee, the Lopez family relied on corn and beans, but financial struggles forced Mario’s father to seek work on a larger farm, where he discovered the potential of coffee cultivation. Inspired, the family began growing coffee, finding success until 2012, when leaf rust disease nearly wiped out their farm—dropping production from 60 bags to just 10 per year. Hope came in 2014 through the “Mas Café” project, which helped the Lopez family renovate two hectares, restoring their production to 120 bags annually and securing their livelihood.

This medium-bodied coffee offers a smooth, well-balanced cup with rich cocoa powder, dried plum, and a nutty finish. Grown in a close-knit community where farmers honor their heritage with annual celebrations—drinking Posh, eating tamales, and giving thanks for the harvest—each sip carries the spirit of tradition, perseverance, and passion.

We mainly enjoy this coffee as pour over or drip, but it also makes a great espresso! For pour over, try a 1:16 ratio and a kettle temperature of 204°. For espresso, try a boiler temp of 202°, and 18g in to 42g out in 30-35 seconds. Happy Brewing!
